The Hammers had looked set to drop back into the relegation zone after Kiernan Dewsbury-Hall cancelled out Tomas Soucek's opener with just two minutes of normal time remaining.
By that time, relegation rivals Tottenham were winning at Wolverhampton Wanderers - a result that, coupled with a West Ham draw, would see Spurs move out of the bottom three.
But Wilson - who had been introduced as an 81st-minute substitute - sent the London Stadium wild when he coolly slotted in.
With Spurs also winning their game, West Ham remain two points above the relegation zone. The win felt significant as the Hammers showed the battling qualities they will need in their fight against the drop.

In the end they could not hold on but the visitors will likely feel aggrieved they were not awarded a penalty before the late drama.
Moments before Dewsbury-Hall equalised, the Toffees thought they had a penalty when the ball struck Mateus Fernandes' hand inside the box as he grappled with Thierno Barry. However, nothing was given after a review by the video assistant referee, a decision that left Moyes visibly frustrated.
Despite the loss, Everton are still well-placed in the battle for Europe as they sit three points off sixth with four games remaining.
