Mary Berry demonstrates how a cake is ready when it's golden-brown and coming away from the edge of the tin.
• Press it gently to check – it should be springy to the touch.
• Set the cakes aside to cool in their tins for 5 minutes.
For larger cakes, insert a skewer into the middle of the cake. If it comes out clean, the cakes is done. If not, return the cake to the oven for a few more minutes, then test again.
